Cake Decorating Classes

We are thrilled to announce that our cake decorating classes will begin in April. We have lots of things in store from free demonstrations at least once a month to four week courses that will take you from a beginners to intermediate to advanced stage cake decorating in three levels.
We will be having technique classes where one subject will be taught which will serve as a great way of learning new techniques quickly or brushing up on a technique you've not used in a while.
We have designed our classes to be affordable and interesting. Our classroom will hold a maximum of ten students.
Please note that courses will only run when there are six or more students. Once a class has been filled we can put names on to a waiting list in case of cancellation.

Josie Rudderham always wanted to bake for a living but assumed it was fiscally impossible. So when she was laid off from her job in the mortgage industry after returning from maternity leave last year, she considered it the perfect time to take a shot at opening the company she had dreamed of. Now she is taking her busy home-based business to the next level and opening a storefront on Dundurn Street South, next month.

"We're too successful to stay at home," she says."I'm driving myself crazy working 18-hour days and I have a two-year-old. I wouldn't want to continue doing it this way."

In September 2010, Rudderham founded Cake & Loaf, a from-scratch bakery that uses mostly local and organic ingredients in an effort to support Hamilton's farmers and small businesses. But after a year of selling bread, custom cakes and seasonal desserts at Hamilton farmers markets and through the Community Supported Baking Service, business is booming and her kitchen can't handle the constant inundation of orders.

This demand for home-baked treats had the same effect on business owners Lynne Jury of Let Them Eat Cakes and Debby Stoud of Hotti Biscotti. Like Rudderham, both women started baking from their home kitchens but the influx of orders forced them to go hunting for retail spaces. Jury opened her James Street South bakery in November 2010 and Stoud opened her Westdale biscotti shop in April of this year with her son.

Rudderham, like her fellow Hamilton home-based bakers, says it was impossible to grow Cake & Loaf by producing more product because of restrictions put in place by Hamilton's zoning code on home-based businesses.

"It really limits your growth," she says. "I couldn't hire help and you can only get so far working by yourself."

Not being able to hire outside employees is just one restriction on the list of Hamilton's home-based business regulations, and yet another reason the three home bakers felt pressure to search for retail spaces.

Scott Baldy, licensing facilitator with the City of Hamilton, says there are two main steps food-related businesses must complete before being granted licenses to operate. First, hopeful business owners must arrange their home businesses according to the zoning code of Hamilton. For example, one rule states that the business can only occupy 15-20 per cent of the dwelling, which can be difficult if you have three refrigerators, like Rudderham.

Although home-based bakery owners are not allowed to hire outside employees, they can hire people who live in the house. But for Jury, this was not an option.

"Neither my son, nor my husband were really interested in cake decorating," she laughs.

After organizing their homes according to this code, the business owners must obtain Health Unit approval from the city. The inspectors examine details such as counter space and whether the owner has pets – anything that may lead to product contamination. If the business passes the initial inspection, it is inspected two to four times each year after that.

Although storefront bakeries still need to pass the Health Unit inspection, there is more room for success with more practical zoning restrictions in place. Both Jury and Stoud have experienced huge increases in sales since their stores have opened. This is partly due to walk-in traffic.

"When I first opened I had one floor to display the cakes," says Jury. Lots of people would come in just because they were very curious."

This prompted her to start making cupcakes for her impromptu walk-in guests, just so they could have a taste of her creations without having to buy a whole cake. In April, she decided to open a tea room on the upper floor of the building so her customers could have somewhere to relax and enjoy their treats.

Stoud has about 50 per cent more customers than when she ran Hotti Biscotti from her home kitchen, largely due to walk-in traffic.

Rudderham says she is looking forward to be able to boost her revenue in her new store.

"I have to turn people down all the time," she says about her current circumstances.

She thinks Hamilton needs a place like Cake & Loaf and other small local businesses because people seem to be increasingly interested in supporting local endeavors. This may explain the sudden surge of home-based bakers-turned- shop owners.

"I see people around Hamilton asking for these things," she says. "I see a genuine interest in learning more about where peoples' food comes from."

Cupcake Trinket Boxes

If you are like me and not a big fan of the whole 'blowing on cakes thing' for birthdays then you might be interested in these darling little trinket boxes. Some of them actually play "Happy Birthday", all of them have LED candles that light up and actually blow out. Don't ask me how, but I assure you it works!

These little boxes are $15 each and make a nice little keep sake once the birthday is over.

We can build these little trinket boxes into the design of your cake so that you can have your cake and eat it. How cool is that?

Let It Snow! - Carmen's and Ancaster Old Mill

Two snow themed cakes to deliver one to Carmens Banquet Centre (left) and the other to Ancaster Old Mill (right).

Each cake was unique although they shared many of the same decorative accents. One was completely covered in sugar crystals with bows and snow flake brooches whilst the other had overlaid sugar snowflakes covered in crystallized sugar.

Both sparkled like diamonds and were a lot of fun to make. What an enjoyable week we had this week!

Cars and Pool! The New Car-Pooling?

This week was all about fun cakes. First we had a Cars themed cakes for a little boy called Francesco who is mad about the movie. The client provided the car decorations (these are licensed characters and we are not allowed to make them in sugar). We were inspired by the checkered flag and used a checkerboard finish for the bottom of the cake with some mud, chocolate rocks, grass and other little fun and tasty bits and bobs.

The other cake was a pool table made of chocolate and decorated to look like you could play it! We were also asked to put some poker themed designs on this last minute birthday cake.

Billow Weave

And now for something a little different that was the hit of the recent Hamilton bridal show our new billow weave technique which we've just learned how to do and expect to see a lot of over the coming year.

These little puffs of sugar look like fabric and are dotted with more sugar in the form of golden jewels which are also completely edible.

Topped with a sugar bow and a sugar rose and leaves, so romantic!

Sweet Sixteen cake with a little 'wild side'. Deep purple bow and flowers.

A last minute Christmas birthday cake...more zebra a little bit of bling, jewels (edible diamonds) and a candle in the middle making this the perfect centerpiece allowing you to have your cake and eat it!

A little shot of springtime among all these festivities produced this pink and ivory cake with colourful accents and edible lace for a 25th birthday.

New Year's Eve Wedding - Marquis Gardens, Ancaster

This year we did two New Year's Eve weddings, is this maybe the shape of things to come...no more June brides, gone are the summer weddings? I do hope not.

It was fun to do a champagne wedding cake for this young couple with champagne bubbles as their theme and of course lots of black and blingy glitz as befits the occasion.

Regrettably when we delivered the cake the hall was still being set up and we were not really able to position the cake where we'd have liked to for the photograph, this was more of a 'hope for the best' shot and it's a shame that it's a little out of focus, there's not enough light and you can't really get the whole diamond sparkle.

Ice Skating Birthday Cake

An ice skating cake for an ice skater! We were asked for something seasonal, pink and purple with ice skates.

Of course we dipped the skates in edible glitter and decorated the cake with a wreath of rosebuds, glitter, ice and a row of bling.

Hamburger Cake

Not our usual style, but it's always nice to think 'inside the box' (the hamburger box of course) from time to time.

There was a sweet story behind this cake:

A client came to see us with a photograph of a hamburger cake that her grandson really wanted for his birthday. The client's late husband ha made the cake in the picture and they asked us to recreate it.

After a few tweaks (we used chocolate for the burger and trimmings a much yummier alternative to plain fondant), we also added a little more filling.

The Let Them Eat Cakes burger is created!

Bon Voyage - Paris Cake

Our clients daughter was off to Paris for a year and ordered this cake with a Parisian flair for the Bon Voyage party and coincidentally birthday party.

All parts were edible from cameos to roses to picture frames even the Eiffel Tower itself.

And last but not least our 60th birthday cake for my dear friend Anna.
I was horrified when asked by Anna's daughters to make a Buffalo Bills cake for her birthday. Not only is the name Buffalo Bills, along with it's logo and colours, copyrighted and can't be used...I also wanted to do something super girlie with some of her childhood pictures on it.
I won of course!
Here is our third shabby chic cake of the week complete with Cinderella carriage, and cameos made with Anna's own pictures. We finished the cake with roses, leaves, pearls and sparkle for a complete effect.

Shabby Chic - For Charity

The next one in our shabby chic trilogy is this one which was a cake we donated to a local nursing home where it was auctioned off for charity.

We tried out a new technique for making roses and included small blossoms, pearls and lace pieces, all edible of course. The ivory background added to the vintage feel with the Swiss dot added for an extra lacy effect.

Vintage Style - Anniversary Cake

A last minute order from a distraught husband who had forgotten his and his wife's anniversary! To add to his pain, there were guests coming for dinner to celebrate!
We were able to create this small two tiered cake for the occasion with cameos and gold numbers with sugar orchids and pearls. The flavour of the cake was blackberry and vanilla, very yummy.

For a Disney fan, this Playhouse themed cake. The client provided ready made Disney figurines to put on to the cake. For copyright reasons we are not allowed to use Disney images or make figurines.

We took the pattern from the wedding stationery and transferred it into sugar for the main wedding cake design and added red poppies and red glitter for the finishing touches.

With just a little dab of deja vu this cake was the perfect centrepiece for a small local wedding. The soft quilting pattern at the bottom of the cake gave some texture, the black bow adding drama and the diamond brooch elegance, what a combination!

This cake was antiqued using gold dust prior to being decorated with a white damask finish and huge bows into which we nestled diamond brooches.

A perfect coral tone for this vintage French romance styled wedding at Paletta Mansion in Burlington.

The bride had created the invitations using paper punches for the lace and rubber stamps for the initials. We used the same cutters and stamps but with edible mediums (sugar paste and gold dust) instead to replicate the initials on the cake. The roses that cascaded down the sides of the cake were made of chocolate.

This is one of a few thistle cakes that we've done at the Scottish Rite Club this summer. This time we used an ivory sugar rose at the base of the cake with thistle and cameo roses all around the top tier. We finished with a pearl border.

Myrna is a euchre fan, so it was easy to design a cake around this theme, with the best euchre hand (or so I'm told) and lots of black and red details. We added red roses for a feminine touch and a birthday banner to mark the occasion.

The cards were printed on to edible paper for a realistic look in standard playing card size.

Jake and his father came to my shop looking for a cake for Jake's Bar Mitzvah. Simple enough one would think, but Jake didn't know what he wanted. I asked him what his favourite colours were and he said he liked all colours.

Sometimes it's difficult to make a cake for a man, especially one who's favourite colour is black and who doesn't play sports and who is retired. The theme of the birthday dinner was ivory and gold and I found out that 'Chip' was retired from the envelope business....hence the envelope on the top.
We antiqued the ivory of the cake with gold dust and added a few little embellishments and this became a very formal looking, guy kind of cake!

What a lot of bling! Have you ever seen so much sparkle on a wedding cake? You can see from the close up that the initial on the top was all crystals and pearls, ultra shiny silver balls were added to the quilted tiers with super high (7" tiers) for the bottom and middle tiers with navy blue scrollwork all over. Bands of real crystal ribbon was added for super bling and finally little white hydrangea blossoms to match the bride's bouquet.

This cake was designed for a beautiful vintage wedding. The bronzed bars were finished with strings of white glistening pearls with hand made red roses and leaves. We added some little feathered birds for a close up shot (optional).

What a cute little cake! This cake was super high, the bottom tier was 8" high (double the height of a normal cake tier) to give a beautiful wide palette to paint on. The top tier was 4" high.
The hand made sugar birds were made by Louise Howling, our sugar sculpter.
We hand painted this cake with vibrant greens and deep brown and added deep purple blossoms with even deeper centres and yellow dots in the middle to brighten the tone.
This cake was set on a burlap cloth with a slice of log as a cake stand, perfect!

This cake was designed for a small wedding. The bride brought us a picture of a Chinese dish for us to hand paint the koi fish from. This was one of the most difficult projects we've had in a long time. Hand painting on cakes is one thing....copying an already complex piece of artwork is quite another! We were given the colours red, orange and gold to work with.

First I cut two fish shapes from white chocolate to overlay the fish shape onto the cake, to give some texture and a less flat finish. I polished the white chocolate to give it a high sheen before painting with edible food colours in the same way as the dish was painted. I then painted gold details on the fish to bring out their scale pattern and to give a rich gold tone.

A sugar lotus blossom was dusted with the palest pink and added to the top of the cake.

Pink velvet cake with raspberry buttercream for the cake and red velvet cake with vanilla buttercream for the matching cupcakes. In Chinese culture red and gold symbolize good luck. We added white chocolate lotus blossoms dusted with a little pink edible colour.

This cake was designed to match an elaborate wedding invitation with a very distinctive scroll pattern with the couple's initials. The invitation was printed in gold foil with a beautiful gold envelope.

It was our great pleasure to create a very original wedding cake using the invitation.

The scrollwork at the top was hand cut and inlaid with black fondant and gold dust initials. The gold bow was painted with 24kt gold dust.

Now, I love my job, and I love a challenge....but sometimes it's not obvious how all these elements could come together. Horses? Cupcakes? Yikes!

This wedding cake was booked entirely over the phone with the groom. He knew exactly what his bride wanted and booked the cake sight unseen, without even tasting the cake first.

After the wedding the couple wrote a glowing thank you note:

Now here's a fun cake that we made this summer using for inspiration the couple's very interesting invitations. The royal blue invitations featured the Paris skyline with lots of stars. The envelope was bright orange which matched the bride's orange gerbera daisies. We incorporated all the elements with the all important Paris skyline.

You guessed it, this lovely couple got engaged in Paris and wanted to carry this theme throughout their wedding.

Parchment Flowers - Fuchsia and Orange

This two tiered wedding cake was made to match a fuchsia and orange wedding theme, with hints of lime.
We used parchment roses to complete this soft but very fresh look.

Mellow Yellow

Soft yellow, pretty diamond trim finished with white garden roses and ivy leaves, all made out of sugar of course.

Did you know that fresh ivy is poisonous and must never be put on to cakes?

Here at Let Them Eat Cakes we never put fresh flowers on our cakes and don't sell cakes undecorated for food safety reasons. All our flowers are either edible (ie made from sugar), silk or parchment. The nice thing is they always look fresh (you don't get wilted flowers on your cake cutting pictures because the flowers have been stuck in a cake for hours) and you can keep them after the wedding.

It is interesting to know that most times it is cheaper to go with the sugar flowers than with fresh flowers.

Spiderman

The fact that my husband likes Spiderman is partly true and partly a joke. He says that if Spiderman had a cape like the other super heros that fly then he'd like him better. But I digress. I feel this is a perfect opportunity to discuss a little matter that not a lot of people know about; licensed images.

Superman, Spiderman, Mickey Mouse, Dora the Explorer, Cars, Elmo etc etc are licensed characters their likeness belonging to Marvel, Disney etc etc. For a baker to use an image they have to purchase a license. What about the cake pans that you can buy from the bulk barn in the shapes of these characters? Well, as a business owner I cannot use these pans and sell the cakes I make from them, that would be an infringement of copyright. I can buy one and make a cake for a family member or for fun, but not for re-sale.

If you would like a cake reflecting a licensed character and don't want to make it yourself, what do you do? Well, you go to a toy store and buy little figurines which we will happily put onto a cake in the relevant colours, but we will not, cannot, make figurines from sugar in the shape of these little characters.

Well, what about all the cakes you've seen on line with these characters on? Good question. Either they are cakes that have been made and not re-sold or they are cakes made by bakers who have licenses (as in the case of large supermarkets as these licenses are expensive) or bakers who don't care or don't know about copyright laws.

I just love making cute little baby cakes for my clients. This client asked for the old fashioned lace effect around the sides of the cake making it so delicate and fine that you'd hardly want to cut into it. All the decorations are completely edible even the lace.
