Fleur de Lys - Hamilton Golf and Country Club

This cake with a distinct French flair was for a bride who lived in France.  Actually, after talking to her about it, she lived in the next street to me when I also lived in France, small world indeed!
The bride had supplied me with a fleur de lys cookie cutter to make the cake topper, but after trying it out a couple of times we realised that it was neither big enough or bold enough to carry off the finishing touches to this elegant design.
I made the topper from chocolate and hand sculpted it into it's form and made a chocolate plinth for it to sit on around which the roses were placed.  The lace work on the top tier was brushed with a cream pearl finish which had a gold fleck.  The draping on the middle tier was also brushed with the same finish.  The gold fleur de lys were painted with 24k gold dust to match the fleur de lys on the top.
The roses were made of white chocolate and brushed with pearl dust also to finish the opulent look of this cake.
